How to prepare mushroom eggplants: procedure

 



  • lavare aubergines, tomatoes and basil
  • cut the tomatoes into wedges, cut the ends of the aubergines and cut them into cubes of equal size,
  • put the oil in a large pan, heat it up and cook the aubergines inside, stirring frequently, when cooked remove them with a slotted spoon and keep them aside,
  • to peel the garlic and fry it in the oil, then remove it and add the tomatoes and basil roughly chopped with your hands,
  • regular salt and cook for about ten minutes,
  • add then the aubergines and cook for a few more minutes.
  • Once cooked, the mushroom aubergines can be served both hot and at room temperature.

How to store mushroom eggplants:

The mushroom aubergines, if they were to be left over, can be placed in special airtight containers and stored in the refrigerator for a couple of days.
