Asparagus gnocchi, the recipe to prepare them firm and tasty at home

The asparagus gnocchi can be seasoned in different ways: they are suitable, for example, to prepare a cold pasta with seasonal ingredients, to be seasoned with a red vegetable sauce or creamed in a white salsia with garlic, onion and stracchino.

How to prepare asparagus gnocchi: procedure
- To clean and boil the asparagus in boiling water, drain and cool when cooked,
- put them to follow in a food processor and grind them to obtain a puree,
- arrange the flour on a pastry board and add the asparagus puree in the center,
- iniziare to knead and when the two ingredients have blended add a little water at a time
- and knead until a compound with a firm, elastic and non-sticky consistency is obtained.
- Doing swirl a little of the dough on the work surface to form narrow and long cylinders,
- to form now the gnocchi by cutting pieces of dough about one centimeter in size with a knife,
- arrange the gnocchi well apart and cover them with a cloth until ready to cook.
One more tip:
The gnocchi can be boiled in the asparagus cooking water, just keep it aside and lightly salt it before boiling; in this way the gnocchi will be tastier and avoid excessive consumption of water.
