Chicory dumplings in broth, a vegetarian recipe prepared on the basis of Tyrolean dumplings to recycle stale bread
I chicory dumplings I'm a vegetarian recipe prepared on the basis of Tyrolean dumplings, a traditional dish from Trentino Alto Adige, created for eliminate food waste and to reuse stale bread, they are, in fact, a first course suitable for the whole family.
Chicory dumplings have a soft texture and a very delicate flavor, they can be too prepare in advance provided that they are then heated before being served.
Ingredients
- 350 grams of chicory asparagus
- 200 grams of stale bread
- 1 red onion from Tropea
- 50 gr of vegetable grain
- 2 medium-sized eggs
- About 20 grams of wholemeal flour

How to prepare chicory dumplings: procedure
- To put the stale bread to soak in water and in the meantime wash and clean the chicory.
- When the bread will have doubled its volume by absorbing the water, squeeze it, crumble it and collect it in a large bowl,
- cut finely chicory, peel the onion and finely chop it too.
- Add chicory, onion, cheese and shelled eggs to the bread,
- knead and finally add the flour to give it a slightly firmer consistency.
- With the dough obtained, form meatballs and place them on a plate spaced apart.
- Cook the dumplings in boiling vegetable broth for about fifteen / twenty minutes.
- Cooking when finished, serve and serve still hot.
Curiosity
In the original recipe for dumplings the bread, before being soaked, is cut into small cubes, if you prefer then you can give it this shape before soaking it.
