A good idea may involve preparing the savory broccoli muffins. You can serve these special savory muffins as an appetizer or second course, but also as a different savory snack.

Ingredients

  • 1 broccoli
  • 125 ml of water
  • 50 ml of extra virgin olive oil
  • 150 gr of whole wheat flour
  • 2 teaspoons of cream of tartar yeast
  • 1 tablespoon of rice flour
  • 1 pinch of black pepper
  • 1 pinch of fine salt
  • 1/2 teaspoon of mustard powder

Broccoli muffins: preparation

With the indicated ingredients you will get 8 broccoli muffins. Clean the broccoli and separate the florets. You will need to cook them before you start preparing the mixture for the broccoli muffins. You can choose steam cooking or cooking in a pan with a drizzle of oil and a little water. The broccoli should be soft and easy to blend.

Let the broccoli florets cool after cooking. Weigh 250 grams of cooked broccoli florets and pour them into the mixer or food processor. Blend them adding the extra virgin olive oil and a part of the water indicated, until you get a homogeneous and creamy mixture.

Pour the mixture into a bowl and gradually add it wholemeal spelled flour, the rice flour and the remaining water. While adding the ingredients, stir with the spoon. Season with salt and pepper.

Add half a teaspoon of mustard powder (you can find it among the spices in a jar in some supermarkets and organic shops) or alternatively half a teaspoon of mustard sauce. This ingredient is used to give an extra touch of taste, but you can omit it if you don't have it available at the moment.

For broccoli muffins to be successful, the mixture must be creamy and fairly thick. Insist on mixing for mix the flour into the blended broccoli evenly. However, it all takes a few minutes.

As a last ingredient add the cream of tartar yeast (it is found on the market as organic yeast powder and is suitable for both sweets and savory preparations). Mix the mixture one last time and pour it into 8 lightly oiled muffin molds.



Fill the molds three quarters full. The number of muffins you will get may vary depending on the size of the molds themselves. Bake the broccoli muffins in a preheated static oven a 180 ° C for about 25 minutes until golden brown. Enjoy your meal!
