Spelled salad autumnal with pomegranate grains, grapes, nuts and pumpkin seeds. Here is a recipe that contains the flavors of autumn and that will allow you to bring new flavors and colors to the table, thanks to the pomegranate (or pomegranate) and citrus juice (oranges or lemons) that will serve you as a condiment.

Serve theautumn spelled salad lukewarm or cold, as an appetizer or aperitif, but also as a side dish. One more idea for an aperitif: prepare mini portions of spelled salad in transparent glasses, so guests can serve themselves with ease.

Ingredients

  • 300 grams of spelled
  • 12 walnuts to shell
  • 4 tablespoons of pumpkin seeds
  • 3 tablespoons of extra virgin olive oil
  • 1 ripe pomegranate
  • 1 bunch of grapes
  • 1 pinch of powdered ginger
  • 1 pinch of black pepper
  • Pink salt or whole salt
  • Juice of half a lemon or orange

Preparation

For the preparation of this autumn salad you have a choice wholemeal spelled or hulled, or pearl spelled, remembering that cooking times will be different. The hulled spelled only undergoes the separation of the husk, the outermost part, while the pearl spelled sees the elimination of most of the bran.



Do not forget to soak for at least 6 hours for wholemeal or hulled spelled, while for pearl spelled no soaking is required. The cooking of the farro after soaking is between 45 and 60 minutes. With a prolonged soak of up to 12 hours, about 30 minutes can be enough cooking. Check the instructions on the package of spelled at your disposal to better evaluate the cooking times and any soaking.

Spelled is cooked by boiling it in boiling water, to which you can add whole salt. Do not use the soaking water for cooking. If you want, keep it aside to water the plants. Stir the spelled from time to time while it cooks with a wooden spoon. Then drain the spelled when the grains are well cooked but not too soft.

If you want to serve the cold spelled salad e you don't have much time, you can rinse the spelled in the sink under a trickle of cold water after pouring it into the colander. At this point, prepare a bowl that will contain the spelled ready to be seasoned. The advice is to add extra virgin olive oil immediately and mix well, while preparing the other ingredients.

Already while cooking spelled, start preparing the ingredients. Shell the pomegranate. Wash the grapes and separate the berries. Squeeze half a lemon or half an orange. You can emulsify their juice with extra virgin olive oil, mixing vigorously with a fork, or use the condiments separately, adjusting according to your tastes. Shell and chop the walnuts. If you like, toast the pumpkin seeds. Combine all the ingredients with the boiled spelled, taste to best flavor everything with whole salt or pink Himalayan salt, pepper and ginger powder, and serve your healthy and colorful spelled salad.
