How to prepare the zucchini omelette: procedure

  • To put in a large pan the freshly prepared courgettes and onions and plenty of oil, season with salt and cook for about ten to fifteen minutes,
  • meantime shell the eggs in a bowl, add the mint leaves, chopping them coarsely and beat everything with a fork.
