Ingredients

  • 250 gr of durum wheat semolina for gnocchi
  • 2 tablespoons of extra virgin olive oil
  • 1 liter of vegetable broth
  • 1 pinch of curry
  • 1 pinch of salt and pepper
  • 1 tablespoon of breadcrumbs
  • ½ teaspoon of turmeric powder
  • ½ teaspoon of oregano and chives

Preparation

The ingredients indicated are used to prepare a pan of gnocchi. The number of gnocchi you will get varies according to the size with which you will shape them. For example, you can use a small pastry ring or a coffee cup to moisten the edges with cold water or grease with extra virgin olive oil, depending on what you have available.



To prepare the gnocchi you can use a lasagna dish, without forgetting to grease the bottom with a drizzle of oil. There durum wheat flour for the preparation of gnocchi is usually found in the supermarket.

To cook the semolina in the indicated doses of 250 grams you will need a liter of vegetable broth. Alternatively you can use water (to be salted as for pasta) or unsweetened vegetable milk (for example rice or oat milk, in this case the advice is to dilute it and use half a liter of vegetable milk and half a liter of water to reach the total liter needed).

In a saucepan, bring the edge of vegetables (or alternatively water or vegetable milk) to a boil and add it turmeric, curry and herbs. Gradually pour the semolina into the same pot, stirring with a whisk and be careful not to form lumps.

When you have poured all the semolina, continue to mix with a wooden spoon, lower the heat and continue cooking the semolina for about 10 minutes (also check the cooking times indicated on the packages of semolina for gnocchi you have purchased).

When the mixture is homogeneous but not too thick, pour it on a large baking sheet (the suggestion is to use the classic rectangular pizza pan). Keep one thickness of about half a centimeter. Make the surface of the mixture even with the help of a spoon or a spatula.

Let it cool for a few minutes and start forming your gnocchi. Gradually distribute them in a lasagna pan that you will have greased on the bottom and on the edges with a tablespoon of extra virgin olive oil. Before baking, sprinkle the gnocchi with a tablespoon of extra virgin olive oil, a tablespoon of breadcrumbs, oregano and chives (and / or other herbs and spices to taste). Bake in a preheated oven at 180 ° C for 20 minutes approximately. The surface should be golden and slightly crunchy. If necessary, finish cooking for a couple of minutes with the oven grill.
