As per the traditional recipe, our cheesecake has a filling prepared with spreadable cheese and cream; the glaze instead is prepared with fresh fruit e agave syrup and it does not need any type of thickener, just cook it for a few minutes and wait for it to cool down a bit in the refrigerator.

This cake, in fact, must be prepared well in advance as it needs to rest for at least ten hours to allow the strawberry topping to "pull" without using isinglass or other types of gelatine.

Ingredients

  • 180 gr of dry biscuits
  • 100 g butter
  • 175 gr of spreadable cheese
  • 250 ml of fresh cream
  • 50 grams of powdered cane sugar
  • 200 gr of already washed strawberries
  • 100 ml of water
  • 6 grams of corn starch
  • 20 grams of agave syrup
  • additional strawberries to taste

How to make strawberry cheesecake: procedure

 



  • Crumble finely cookies in a food processor,
    melt the butter and add it to the biscuits and mix by operating the blades again,

  • transfer then the mixture inside an opening circle placed in a tray, or in a mold with a removable bottom previously lined with parchment paper,
  • and crush all with a spatula, place in the refrigerator

  • and in the meantime prepare the filling by mixing the spreadable cheese with the powdered brown sugar,
  • in another bowl whip the cream until stiff e

  • with gods circular movements that go from the bottom upwards incorporate the whipped cream to the cheese,
  • to wash carefully additional strawberries, cut them into slices and lay them along the entire perimeter of the circle,
  • add then the filling, level it with a spatula and place in the refrigerator.

  • To melt now the cornstarch in the water,
  • blend the two hundred grams of strawberries with agave syrup and pour the puree obtained into the starched water,
  • place over the heat and simmer, stirring frequently until the amount of water is halved, then turn off the heat and let it cool,
  • when the icing will be cold pour it on the cheesecake, level it gently with a spoon and place in the refrigerator for at least ten hours.
