How to prepare pasta with pumpkin and pine nuts: procedure
- To clean the pumpkin by removing the peel, seeds and internal filaments,
- cut it into small very thin pieces and also clean the garlic,
- cut it in half and fry it in plenty of oil,
- when the oil will be hot add the pumpkin,
- cook it inside until it is completely wilted and browned well and only at the end of regular salt cooking.
- In a frying pan non-stick toast the pine nuts for a few minutes, taking care to move them often,
- meantime cook the pasta in abundant salted water and when it is al dente, mix it with the pumpkin and finally add the pine nuts.
