Shortcrust pastry with oil, the recipe (vegan) to prepare it without butter

Pasta broken all'olio, vegan recipe of one of the most versatile bases used in the kitchen. Elastic, easy to prepare, it does not need rest time; it is perfect for making tartlets, pies and savory pies.

To be prepared with the use of a mixer or even by hand, the shortcrust pastry with oil is without butter and therefore also suitable for those with intolerances or food allergies to milk and its derivatives. Mixed with type 1 flour, water and good extra virgin olive oil, it can also be prepared a few hours in advance, just put it in the refrigerator until ready to use it.

How to prepare the oil shortcrust pastry: procedure


  • Leek the flour, salt and oil in a bowl or in the mixer,
  • iniziare to knead and when the oil is absorbed add the water and
  • continue to knead until it is completely incorporated,
  • to this point finish kneading by hand for a couple of minutes to form a well-blended stick of shortcrust pastry.
  • The shortcrust pastry it can also be used immediately and must be baked in the oven at 180 °.
