Shortcrust pastry with avocado, the light recipe to prepare biscuits and pies without butter or oil

Light pasta frolla with avocado, prescription to prepare one of the most famous pastry bases without butter, nor oil. Variant of the classic recipe, it is prepared with unrefined ingredients for light, soft and fragrant homemade tarts and biscuits.

Avocado, a fruit with well-known nutritional properties, is perfect to replace butter in different preparations because, once blended, with its oils it can compact the doughs well.

To prepare this light shortcrust pastry and without lactose it is necessary to use a ripe avocado, therefore soft to the touch, and according to taste, it is possible to flavor the mixture with seasonal citrus peel or with vanilla seeds.

How to prepare shortcrust pastry with avocado: procedure


  • To peel the avocado and remove the stone, put the fruit in a food processor and grind it until you get a puree,
  • in a bowl add the flour, sugar, egg, baking soda and possibly the aromas,
  • add the avocado and knead everything until you get a very compact dough.
  • Once ready, the light shortcrust pastry can be used immediately; it is advisable to work it with additional flour to make it less sticky.
