Here are all the instructions to prepare the peach pudding homemade.

Ingredients

  • 6 ripe peaches
  • 150 ml of almond milk
  • 1 or 2 tablespoons of brown sugar (optional)
  • 1 tablespoon of cornstarch (cornstarch)
  • 1 teaspoon of agar agar
  • Peach, cardamom seeds, coconut or chocolate flakes for garnish

Preparation

With the indicated ingredients you will get 4 peach puddings using molds of 90-100 grams each. To start preparing homemade peach puddings, wash and peel the peaches. Cut them into wedges, remove the stone and divide them into cubes. Pour the peaches into the blender without adding water or almond milk.



You can also use a municipality immersion blender, pouring the peaches into the special graduated glass. From 6 medium-sized peaches (calculate 450-500 grams of pulp) you will get a smoothie of about 350 milliliters.

Now you can pour into the glass with the peach smoothie 150 milliliters of almond milk to reach a total liquid total of 500 milliliters. Blend very well until the mixture is very smooth and homogeneous. Instead of almond milk you can use any other type of milk of your choice.

If the peaches are well ripe or if you have chosen an already sweetened vegetable milk, you will not need to add sugar. If you want, you can prepare almond milk at home (Thu recipe). Taste the smoothie obtained from the peaches and milk of your choice to evaluate the degree of sweetness you prefer. You can substitute brown sugar with other natural sweeteners according to your preferences.

Blend everything well again after adding the sugar or other sweetener. At this point you can combine the corn starch (you can find it in supermarkets under the name of "Maizena") and theagar agar in polvere (you can buy it in organic food shops and the Internet).

Corn starch is needed to thicken the pudding while agar agar is needed to gel. Indeed, agar agar is a gelling agent of vegetable origin used in cooking and natural pastry to replace "isinglass". After combining the two ingredients to the mixture, blend again very well so that no lumps are formed.

Usually to gel 500 milliliters of liquid is enough 1 teaspoon of agar agar. In any case, check the instructions on your packaging carefully. Prepare a saucepan, preferably with a thick bottom, or place a flame spreader on the stove. Pour the mixture into the saucepan e bring to a boil over low heat, stirring occasionally.



Homemade peach pudding


Bring to a boil and simmer for about 3 minutes, until you notice that the mixture begins to thicken. The pudding will solidify as it cools. Divide everything into four molds. Let it rest at room temperature for a couple of hours and then transfer the puddings in the fridge for another two or three hours, until they have assumed their typical consistency. Serve the homemade peach puddings with cardamom seeds and fruit slices, or with coconut and chocolate flakes.
