As the name suggests, the Ciccio PanCAKE derives from the classic pancakes, typical North American sweets now widespread and appreciated all over the world. The pancakes are prepared with simple ingredients (eggs, flour, milk, butter, sugar, salt and vanilla) and are quite thick, which distinguishes them from classic crêpes.

In the case of Ciccio PanCAKE, which is prepared with the same type of dough, the thickness further increases until it becomes a real mini cake, a tall and very soft CAKE to be filled at will.

But the Ciccio Pancake is depopulating, above all, among sportsmen and those who prefer a healthy, dietetic and low-sugar breakfast. And it is no coincidence that on social media, from Instagram to Tiktok, from Youtube to Facebook, the protein recipes of Ciccio Pancake go crazy in many variations with oat flour, rice, with vegetable milks or Greek yogurt

Ciccio PanCAKE: the protein recipe

We said that Ciccio PanCAKE shares pancakes withbase dough, which can be prepared at will according to one's tastes and diet, but is particularly suitable for making protein breakfasts very tasty. For this, as a "basic" recipe you can follow the one we provided for the protein pancakes using:

  • 200 gr of egg whites,
  • 90 gr of oatmeal,
  • 225 grams of Greek yogurt, 1 teaspoon of cinnamon (if you like) and 1 teaspoon of baking powder or a pinch of baking soda.

But as we said, in this case the dough must be poured into a saucepan with high sides, not in the pan, just to make it higher. 

Another one interesting recipe is the one proposed by Francesca Zampetti on her Youtube channel, made with wholemeal flour, bicarbonate, lemon juice, egg whites. Instead of baking soda and lemon, many people use hydrolithin which is made up of baking soda and acids that make it react, but the effect is pretty much the same. 

Ingredients

  • 150 g of egg whites
  • 40 gr of whole wheat flour 
  • 1 teaspoon of baking soda
  • 1/2 lemon squeezed

Method

Pour 150 grams of egg whites into a bowl, add the wholemeal flour (usually oat or rice flour is used), mix the mixture until it is deprived of all lumps. Then add 1 teaspoon of sifted baking soda and the lemon juice, a froth should form.

Take a saucepan of about 12 cm in diameter with high edges, butter it and add a little oil, pour the mixture keeping the heat low, then add the lid. Cook 10 minutes on one side and 4 minutes on the other. Now the Ciccio PanCAKE is ready, you just have to stuff it as you like. 



The different types of cooking

Ciccio PanCAKE can be prepared in a pan maximum 16 cm in diameter, with high edges, Microwave to speed up cooking or in the air fryer.

If you opt for the saucepan, you have to lightly oil it on the bottom and sides, pour the mixture while keeping the heat low, add a lid and cook for about ten minutes, then turn it over and cook on the other side for a few more minutes.

In the microwave the Ciccio PanCAKE must be cooked for about 3 minutes at 750W, microwave function, pouring the mixture into one large and wide cup, without the need to grease it. Times and power may vary slightly depending on the amount of dough. 

You can also prepare the dough and pour it into a non-stick mold and then cook it in the air fryer. 160 degrees should be enough for about ten minutes, but it is better to experiment because depending on the quantity, both times and degrees may vary slightly. 

Fillings 

There is plenty to indulge in the fillings. Usually fresh fruit is added to taste, but also dried fruit or melted chocolate.

A great combination is Greek yogurt with raspberries, strawberries, blueberries or any other fruit to taste. Or chocolate and strawberries, a classic!

 Maple syrup is also always appreciated. And nothing prevents you from experimenting with new fillings. 

Tricks to make it fluffy and tall

To get a really amazing Ciccio PanCAKE, soft and tall as it should be, the first trick is to choosing the right pot. Which should have a maximum diameter of 16 cm. The ideal is a saucepan around 14 cm in diameter with high edges and the same circumference both at the top and at the bottom (that does not shrink at the bottom, in short)



Another trick is the use of the lid during cooking. 

To make the dough rise well, you can use instant baking powder or, alternatively, baking soda and lemon juice. 

While to make it soft, add the fruit to the mixture, softens it and also creates volume, increasing its height.
