The Ministry of Health reminds that egg yolk is high in cholesterol but low in saturated fatty acids, unlike other foods that are rich in both cholesterol and saturated fat, such as Red meat, on which the Ministry of Health suggest very moderate consumption to prevent both cardiovascular disease and cancer.

The Ministry of Health also reminds that dietary cholesterol (i.e. the cholesterol that we introduce with food) increases cholesterol levels albeit to a lesser extent than saturated fatty acids. In conclusion, the Ministry of Health indicates that the consumption of eggs and foods rich in saturated fat and cholesterol should be moderate.

Can we do without eggs?

Those who are allergic or intolerant to eggs, vegans and lacto-vegetarians do not consume this food, other people consume eggs only occasionally.

According to Scientific Society of Vegetarian Nutrition (SSNV), the egg is a small concentrate of cholesterol. In fact, it contains some 250 mg to 371 mg per 100 grams. According to the SSNV, the human body produces sufficient cholesterol for its needs and therefore it is not necessary to introduce this substance with food. So according to the SSNV you can do without eggs and products of animal origin, which all contain cholesterol, with the advantage of reducing the risk of cardiovascular diseases and chronic diseases. It is difficult to determine how many eggs can we eat, if we wish, and how often to keep cholesterol from rising too high. In fact, everything can depend on the amount of cholesterol that our body produces itself and on how we set up our diet, which could already be rich in cholesterol due to the consumption of other products of animal origin, such as meat and dairy products, beyond some eggs.



On the decision of introduce or eliminate the eggs from one's diet there are different opinions. According to the dietician Luca Piredda egg is not an excessively caloric food and those who follow a low-calorie diet and do not have high cholesterol can eat up to 4 eggs per week. Always in his opinion, however, who has high cholesterol and wants to lower it should avoid eggs or consume them in moderation, especially avoiding the yolk. According to Piredda, eggs are still a food not recommended for those suffering from high cholesterol.
