White meat and red meat: the effects on cholesterol are the same

The belief that the consumption of white meat it would not increase the levels of "bad" cholesterol as it happens with red meat. It would seem unfounded: this is what emerges from a study just published in the American Journal of Clinical Nutrition.

The study compared the levels of lipids and lipoproteins present in the blood following a diet rich in saturated fat compared to the levels found in those who follow a diet rich in unsaturated and polyunsaturated fats.

The study involved 113 participants, both men and women, and the subjects were randomly divided into two groups. The two groups were given two different diets: one high in saturated fat and the other low in saturated fats. The protein sources of the diets came from white meats, red meats, dairy products and plant sources.

The researchers concluded that both types of meat have the same effect on cholesterol and triglycerides if the saturated fat levels of the diet are equal.
As for the hiring of protein from vegetable sources like legumes, on the other hand, no increases in blood lipids were found.

The results are in line with recommendations promoting diets with a high percentage of plant-based foods and disprove the belief that white meat is a better choice than red meat in controlling cholesterol and triglycerides and reducing risk. cardiovascular.

Why saturated fats are bad

Diet rich in saturated fats cause an increase in LDL cholesterol, commonly called bad cholesterol. LDL cholesterol represents the way through which the cholesterol produced by our body or taken with food can reach the various tissues and organs of our body.

Il cholesterol it is a very important molecule for our body: it is involved in the production of vitamin D, steroid hormones and bile salts and is essential for regulating the fluidity of the membranes of all our cells. However, when cholesterol is in excess, the LDL in the circulation are too high and can accumulate in the blood vessels.

THEaccumulation of LDL at the level of the vessel wall it can cause atherosclerosis, that is the process that leads to the gradual obstruction of the arteries. Atherosclerosis can in turn cause heart attacks, strokes and other cardiovascular diseases.
A correct lifestyle and a diet low in saturated fat are able to maintain the right levels of blood cholesterol, thus reducing the risk of cardiovascular disease.
