Vegan side dishes: sweet and sour onions

Rich in vitamins, mineral salts, anti-inflammatory and antidiabetic properties, onions are an ancient and precious food for our health. Often considered a mere condiment (sometimes not too appreciated for its strong and persistent taste) onion is a natural antiseptic, which aids digestion and facilitates blood circulation.

To enhance the goodness of the onion, we offer you a dish that is very easy to prepare, which you can serve as an appetizer or as a side dish: sweet and sour borettane onions.

    Ingredients for 4 people:

    • 400 g of borettane onions
    • 6 tablespoons of extra virgin olive oil
    • two pinches of salt
    • 80 g of sugar (honey for those who are not vegan)
    • two glasses of cooked wine (or red vinegar)
    • a cup of water

Put the oil in one medium-sized pot, put it on medium heat and when the oil is hot, pour the onions; fry for two minutes, then add the salt and sugar, stir for another 2-3 minutes, then pour the cooked wine, lower the heat to low, cover and simmer for about 30 minutes, making sure to check and turn them often .

During cooking the cooked wine sauce will dry: add a cup of water and mix well. When cooked, add salt, let it rest for a few minutes and serve!
