I chose the main ingredient wholemeal spelled flour, as a variant of the classic wheat flour. It has a delicate flavor that goes well with the stronger taste of walnuts. Here are all the ingredients needed for the preparation of the biscuits and the instructions for the dough and cooking.
250 grams of wholemeal spelled flour
140 ml of soy or almond milk
60 grams of rice flour
50 grams of shelled walnuts
80 grams of whole cane sugar
60 grams of almond cream or organic vegetable butter
3 tablespoons of extra virgin olive oil
1 teaspoon of organic baking powder
1 teaspoon of organic vanilla powder
1 pinch of salt
With the quantities indicated for the ingredients you will get at least 40 cookies. Let the almond cream or organic vegetable butter soften for a few minutes at room temperature before starting the preparation of the biscuits, so that it is workable. Then pour into a bowl, add the brown sugar and whisk vigorously with a fork.
Gradually add the other dry ingredients starting from the spelled flour. Then add the rice flour, baking powder, vanilla powder and a pinch of salt. Mix the ingredients well and make sure that they combine with each other by adding the extra virgin olive oil and vegetable milk. Finely chop the walnuts with a kitchen mixer and pour them into the bowl with the other ingredients. Work the dough with your hands until the mixture is smooth and homogeneous. It must not be sticky. If needed, add a spoonful of rice flour or knead with floured hands.
Once ready, the dough must rest in the refrigerator for 30 minutes before moving on to the formation of biscuits. Meanwhile, prepare at least two trays and line them with baking paper. After the resting time, flour the table and divide the dough into three equal parts.
Roll out one at a time with a rolling pin and try to obtain a thickness of about 4-5 millimeters. Cut out the biscuits with the special molds or with a pastry cutter. Arrange them on baking sheets lined with baking paper. Bake the wholemeal biscuits with spelled flour and walnuts in fan oven a 180 ° C for 15 minutes.
