If you have some berries available, such as i blueberries, but alternatively you can also use blackberries, raspberries and strawberries, you can make this really fresh and easy to prepare dessert. Just a few ingredients will be enough to create a summer dessert with berries in minutes, like these creamy blueberry shots that we propose, a kind of single portion cheesecake practical and greedy.



It is a single-portion dessert that you can serve at a lunch or dinner with friends, or at a invite to buffet. For this recipe you can choose the classic or vegetable spreadable cheese, so you can prepare a dessert also suitable for vegans or those who are lactose intolerant. Here are all the ingredients and instructions for the preparation.

Ingredients (for 6 small glasses)

300 gr of classic or vegetable spreadable cheese
3 or 4 wholemeal biscuits
30 ml of agave syrup or other natural sweetener
50 g of fresh blueberries
1 pinch of cinnamon or vanilla bean powder
Juice of half a lemon

Preparation

With the indicated doses you will get 6 single portion shot glasses about 60 grams each. For the preparation of the blueberry creamy glasses you will have to start thinking about the biscuit base. You can choose wholemeal biscuits or in any case very light dry biscuits or cereal biscuits.

If you love to prepare cookies at home, you can follow one of our recipes to make some Grancereale type biscuits or Digestive type biscotti which will be great to create the base of your creamy shot glasses.

Once the biscuits have been chosen, 3 or 4 will be enough to crumble with a food processor or pestle. So you are ready to pour the crumbled cookies into the shot glasses to create one base about half a centimeter. For this base you do not need to add other ingredients, but if you want to make it more compact, add a drop of agave syrup to each glass and mix.

At this point you can I will prepare the cream in a very simple way: just mix the cream cheese and agave syrup or any other natural liquid sweetener you have chosen with a fork until you get a homogeneous mixture, such as maple syrup or rice malt.



When the cream is ready, pour it with the teaspoon into the small glasses until they are about half full. Compact and flatten the surface of the cream with the tip of the spoon. Season the blueberries with a few drops of lemon juice.

Arrange a layer of fresh blueberries in the glasses and then proceed with a new layer of spreadable cheese until you reach the edge. You can use both classic spreadable cheese and vegetable cheese (if you are vegan or lactose intolerant) since it is now easily found even in the supermarket.

At this point you just have to complete the glasses by adding a pinch of cinnamon or vanilla bean powder and decorating with fresh blueberries, always after sprinkling them with a few drops of lemon juice, the last layer of the preparation. THE creamy blueberry shots they are ready to serve, but you can also keep them in the refrigerator for a couple of hours before bringing them to the table, so they will be even fresher.
