Cold rice with basil cream. A quick and healthy recipe for a last minute dinner? I propose you a tasty vegan rice, light and fragrant, ideal for fighting the summer heat!





Fresh and very simple, the recipe to prepare this cold rice it is an aid to those who are not very familiar with cooking or do not want to spend too much time in the kitchen!

Ingredients for 2 people:

200 g of rice (you can choose what you prefer, but basmati is the best)

a small salad bowl filled with basil leaves

2 tablespoons of extra virgin olive oil

half a glass of water

2 handfuls of pine nuts

2 tablespoons of sliced ​​almonds or (for non-vegans I recommend 2 tablespoons of grated Parmesan cheese)

Preparation:

1) Put on the fire a saucepan of water and - once it comes to a boil - lower the rice, which will have to cook for 16-17 minutes (or according to the instructions on the package)

2) Meanwhile, prepare the sauce: rinse the basil leaves under running water, put them in the mixer, add the oil, water, salt, pine nuts and almonds (or cheese) and blend everything in order to obtain a homogeneous mixture.

3) Once the rice is cooked, transfer it to a pasta-drainer, cool it under running water for a few minutes, drain it well and transfer it to a bowl, pour the basil sauceor that you have prepared, mix well to mix everything and serve!



Of course, if you prefer, you can use this sauce to dress pasta, couscous or quinoa, but it is also suitable for enriching pizzas, bruschetta, croutons and freselle!
