Vegetarian Halloween Recipes: Mother's Pumpkin Pie

Ingredients for the filling:

  • 1,5 KG of Mantuan pumpkin
  • 70g dried porcini mushrooms
  • 1 large yellow onion
  • 100g grated parmesan
  • 2 eggs
  • Salt, black pepper

Ingredients for the broken pasta:

  • 500g Farina 0
  • ½ glass Oil
  • Water, salt

It is done first on stuffing because it will have to be cold when you put it in the lining. Boil the pumpkin in large pieces with the peel, when cooked, let it cool and then peel it. Mash it with a fork until it becomes creamy.

Boil some water and soak the dried mushrooms for 10-15 minutes. Once softened put them on a cutting board, if necessary clean them and cut them into chunks.

Prepare the chopped onion, put the pumpkin in a large pan to contain the pumpkin, with 4 tablespoons of oil and the mushrooms, then add the pumpkin and mix to let the pumpkin dry well. There Mantuan variety it is the best to make this dish because it has a little watery and quite sweet pulp.

Let it cool and in the meantime turn on the oven and bring it to 180 °.

Prepare the broken pasta mixing the ingredients and roll out a round pastry a little larger than the pan you want to use to then be able to form a border.

Now add the parmesan, whole eggs, salt and pepper to the pumpkin and mushroom filling and place it on top of the pastry already placed in the pan. Level and fold the dough inwards until form a border which you will then gently mash with the prongs of the fork.



Bake for 45 minutes or more, until the dough is golden.



My mom with leftovers of pasta makes delicious savory biscuits which he then puts on the table as an appetizer…. From this prelude I always know that afterwards there is waiting for me fantastic Pumpkin Pie which in Hallween is more apt than ever!
