Rich in vitamins, good fats and mineral salts, almonds are a precious ally against type 2 diabetes and a natural weapon also against cardiovascular diseases (as long as they are dosed and eaten consistently for a period of at least 16 weeks). For this reason, we have decided to offer you a light dessert, which is suitable for any type of diet, even for vegans, who exclude all animal derivatives from their diet.

For this reason, we have decided to offer you a light dessert, which is suitable for any type of diet, even for vegans, who exclude all animal derivatives from their diet.



In fact, in this recipe it will be enough almond milk, corn starch, sugar and vanillin seeds. Everything can be decorated and stuffed with sliced ​​almonds, perhaps toasted, dark chocolate drops and cinnamon.

Ingredients for 4 people:

  • 1 liter of almond milk
  • 90 g of corn starch
  • 3 tablespoons sugar
  • the seeds of a vanilla wand
  • almonds, black chocolate flakes and cinnamon to taste for decoration

Pour the almond milk into a saucepan, then sift the cornstarch and pour it slowly - little by little - into the liquid, mix well with a whisk; when the starch has completely dissolved, put the mixture on the stove, over low heat, and stirring constantly, wait for it to boil.

When the liquid starts to boil, stir vigorously for about 3 minutes, then turn off the heat, add the sugar and vanilla, stir again and let it cool for a few minutes.

At this point, place the cream in special cups, let it cool completely and keep in the fridge for at least an hour.

Before serving your almond mousse, decorate the cups according to your taste: with almonds, cinnamon sticks and grated black chocolate!
