    Ingredients for people 4

    • 200g of dehydrated soy morsels
    • 500g of pumpkin
    • 1 onion
    • A handful of pine nuts
    • 20g sultanas
    • Instant preparation for yeast-free vegetable broth
    • Extra virgin olive oil
    • Red soy sauce
    • Whole salt and chili pepper to taste

    Preparation:

    Put the soy morsels in half a liter of water in which a has been dissolved spoonful of instant broth and bring to a boil. Cook for ten minutes, turn off the heat and let it rest for the same number of minutes, then drain the morsels and set them aside.

    Cut the onion sliced ​​and put in a pan with a couple of tablespoons of oil, pine nuts, raisins already softened in warm water, peperoncinor according to taste and a pinch of salt. When it has softened, add the diced pumpkin, brown it and then continue cooking, adding a little broth when needed.

    Second Vegan: Soy stew with Pumpkin


    Take now i soy morsels, brown them in a pan with a little extra virgin olive oil and sprinkle them with a spoonful of red soy sauce. Add the cooked pumpkin and mix for about ten minutes. Serve with a little raw extra virgin olive oil if necessary.
