    Certainly the easiest method to check the wholesomeness of the eggs we have at home - beyond the expiration date indicated on the package - is to dip them, one at a time, in a glass of water at room temperature. If the egg is fresh and still good to eat, we will see it resting on the bottom of the glass, while if it is no longer so fresh it will tend to rise to the surface: this is because between the egg shell and its contents there is a thin membrane which, when the egg is no longer fresh, begins to detach, creating an air chamber that leads the egg to float.

    Even once opened, the egg can tell us a lot about its quality. If, for example, the yolk appears round and compact and well attached to the egg white, the egg is really fresh; in reverse, a watery and "flaked" egg white indicates that the egg is old and it should be thrown away. Furthermore, even a markedly sulphurous smell is synonymous with an egg that is not fresh or not properly preserved.


    In general, it is better to consume well-cooked eggs - especially if we have had them at home for a while: in this way we will greatly lower the risk of running into some infections. The average "duration" of an egg is approximately 28 days from its laying, but it would be advisable to consume it within a couple of weeks in order not to lose the benefits of this food.
