Ingredients

350 grams of spelled flour
100 ml of plain yogurt
100 ml of fresh orange juice
100 gr of whole cane sugar
50 ml of extra virgin olive oil
50 ml of milk
2 eggs
1 tablespoon of grated orange zest
1 pinch of salt
1 sachet of organic baking powder

Preparation

In a large bowl mix the liquid ingredients. Mix the eggs with a whisk together with the yogurt, milk, orange juice and extra virgin olive oil. Add the brown sugar and continue mixing.

Little by little pour the flour and mix it with the other ingredients, trying not to form lumps. We advise you to sift the flour before using it. Add the orange zest, a pinch of salt and finally the yeast to the mixture of your soft orange cake.

Pour the mixture into an oiled and floured cake pan. Bake your orange cake in a preheated oven at 180 ° C, until golden brown. Test the toothpick before taking it out of the oven to check the cooking inside. After taking it out of the oven and letting it cool, you can fill your orange cake with homemade jam if you want. You can also garnish your orange cake with some almonds.

If you want to replace the eggs, use 2 tablespoons of rice flour or potato starch in place of each egg. To prepare a gluten-free soft orange cake choose a mix of gluten-free flours for desserts. The XNUMX cups milk and yogurt vaccine are easy to replace with your favorite plant-based alternatives.
