Wholemeal pancakes with pear jam and cinnamon, vegan recipe. Here is a greedy alternative for breakfast or for a snack. Pancakes, a typical dessert of the United States, are reminiscent of French crepes, but are smaller and thicker. Classic pancakes are served with maple syrup, jams and fresh fruit. Preparing them at home is very simple. We offer them in a vegan version. You can accompany them with a homemade pear and cinnamon jam. Without eggs and without butter they will be much lighter.



Wholemeal pancakes with pear jam and cinnamon

Here is a 'greedy alternative for breakfast or for a snack. THE pancake, typical dessert of the United States, are reminiscent of Crepes French, but are smaller and thicker. Classic pancakes are served accompanied by Maple syrup, jams and fresh fruit.

Preparing them at home is very simple. We propose them to you in version vegan. You can accompany them with one pear jam and homemade cinnamon. Without eggs and without butter they will be much lighter.

For the pear and cinnamon jam:

500 gr of pear pulp
150 gr brown sugar
½ teaspoon of cinnamon powder
½ lemon

Wash and peel the pears. Cut them into chunks and place them in a bowl. Sprinkle them with lemon juice, cover with brown sugar and mix. Leave macerate for 1 hour. Pour them into a saucepan, add the cinnamon powder and mix. Cook over low heat for about 40 minutes, or in any case until you get the desired consistency for the jam.

If necessary, use an immersion blender. Stir with a wooden spoon from time to time. Set aside a few tablespoons of pear jam to garnish the pancakes. You can pot the rest of the jam, still hot, in a sterilized glass jar and to be closed very well, which you can keep in the pantry for at least 6 months.

Pear and cinnamon jam can be prepared even without sugar, taking care to add an apple and half a glass of water to the preparation. You can follow the prescription area of sugar-free pear and ginger jam, using cinnamon as an alternative spice.

For the pancakes:

  • 200 gr of whole wheat flour
  • 300 ml of cold water
  • 2 tablespoons of brown sugar or rice malt
  • 2 teaspoons of baking powder
  • 1 teaspoon of organic vanilla powder
  • 1 tablespoon of rice malt for garnish
  • 4 tablespoons of pear jam
  • 1 teaspoon of oil
  • 1 pinch of salt

With the indicated ingredients you will get 8-10 pancake. In a bowl, pour the cold water and gradually add the flour. Mix vigorously with a whisk, to avoid the formation of lumps. Add the brown sugar, baking powder, vanilla powder, a teaspoon of oil and a pinch of salt. Mix the ingredients well. There batter it must turn out rather liquid, therefore, if necessary, add a little more water.



Wholemeal pancakes with pear jam and cinnamon


With a kitchen brush, grease one with oil no stick pan about 20 centimeters in diameter and heat it over low heat. To cook the pancakes you will have to proceed by pouring them into the center of the pan half a ladle of batter. Cook each pancake on both sides until golden brown, turning gently. Serve the pancakes garnished with the pear jam and rice malt. You can replace the malt with the classic maple syrup, if you have it available.
