After discovering that the mango helps to lose weight, I thought I'd offer you one delicious recipe, light and fresh: mango pralines, with quinoa, coconut flour and chopped pistachios!

Ingredients

  • 1 small mango
  • half a cup of quinoa
  • 1 cup of water
  • 2 spoons of brown sugar
  • 7 tablespoons of coconut flour
  • 5 tablespoons of chopped pistachios

First wash the mango well, making a gruel of water e sodium bicarbonate, which must first be spread over the entire peel of the fruit and then thoroughly rinsed under running water to remove all residues.



Once clean, dry the mango well, peel it and cut the pulp into pieces, but be careful because in the center of the fruit there is a large hard stone, which you will have to scrape well to make sure you pull off the pulp and juicy filaments well.

Then put the pulp and half of the peel in mix, blend everything until you get a smooth cream and set it aside.

At this point, put the quinoa in a colander and rinse it well under running water to remove all residues (which would make it bitter), then drain and put it in a saucepan, pour 2 cups of water and bring to a boil, then add the sugar, stir and let it boil until when the water has not been completely absorbed. Then let it cool completely.

Once the quinoa has cooled, add the coconut flour and mango cream, mix until you get a dense and compact dough, then - with your hands - make balls with a diameter of about 3-4 centimeters.

Roll the meatballs obtained in the chopped pistachios and once all the pralines are completed, keep them in the freezer for 20 minutes, then move them to the refrigerator e always serve them cold!
