A diet and vegan recipe to propose for a quick dinner? This time we offer you a very light dish, easy and quick to prepare: tomato cous cous with coral green beans, flavored with turmeric.





Ideal for adults and children, it is recommended above all for those on a diet, but also for gourmets!

Ingredients for 2 people:

  • 300 g coral green beans (cut into squares)
  • 150 g of couscous
  • 300 g of chopped tomatoes
  • half a large onion
  • 2 tablespoons of extra olive oil
  • 2 cups of water
  • 2 pinches of salt
  • 1 pinch of turmeric

Clean and cut the onion in two, take one half and make many thin slices, put them in the pressure cooker and brown them - over medium heat - with two tablespoons of extra virgin olive oil.
When the onion is well softened, add the chopped tomato, the salt and stir for a couple of minutes; then add the green beans cut into squares, pour a cup of water, mix well and close with the lid.

Let it cook for about 20 minutes from the start of the hiss of the valve (if you don't have a pressure cooker, the cooking time is about 40 minutes), then turn off the heat and let out all the steam.

At this point all that remains is to add a cup of water and pour the couscous (the pre-cooked one you find at the supermarket), mix well and wait for the semolina to swell properly (about 7 minutes, but better if you follow the instructions written on the packaging of your couscous).
Once cooked, add a pinch of turmeric, mix and serve!
