Valentine's Day: Rice Malted Cookies (Sugar Free)

Rice malt cookies for Valentine's Day. For the realization of these biscuits, perfect as a gift or simply to be enjoyed on Valentine's Day, I thought of replacing the sugar with rice malt. Rice malt is an ingredient with a very balanced flavor, not excessively sweet, but very pleasant, often used in natural and macrobiotic pastry.

For the realization of these biscuits, perfect as a gift or simply to be enjoyed on the occasion of Valentine's day, I thought to substitute for sugar il rice malt. Rice malt is an ingredient with a very balanced flavor, not excessively sweet, but very pleasant, often used in natural and macrobiotic pastry.



Compared to sugar, rice malt, like other malts (corn, wheat or barley, for example), is absorbed by the body more slowly and is therefore considered healthier. Unlike sugar, the consumption of malt it does not create glycemic peaks and does not impoverish the body of vitamins and mineral salts.

In this recipe, the rice malt can be replaced with the corn malt and semi-wholemeal flour with 0 flour. The biscuits are very light. They are quick to prepare and require very few ingredients, as well as being completely free of products of animal origin and therefore suitable for who it is vegan.

Ingredients for 30 biscuits

250 grams of semi-wholemeal flour
50 grams of organic corn oil
80 grams of rice malt
½ teaspoon of organic vanilla powder
1 teaspoon of cream of tartar yeast Water

Method

To obtain these heart-shaped cookies, the special molds are required. Of course, any type of cookie cutter is suitable, so that the cookies can be repurposed also on other occasions, outside of Valentine's Day. The heart shape gives the cookies an extra touch of romance.

Start preparing the biscuits by mixing in a bowl, with the help of a spoon, theorganic corn oil (its more delicate flavor compared to the unmistakable taste of extra virgin olive oil makes it perfect for the preparation of desserts) and rice malt. Rice malt can be purchased at health food stores. When the two ingredients are well blended, gradually add the flour and mix the mixture well with your hands, gradually adding a little water, until you get a smooth and homogeneous dough.



Add the vanilla powder (I recommend using the vanilla bean powder, as it is much more natural than other extracts and because the flavor is better) and the yeast before kneading again.

Once you have formed your ball of dough, which should not be too sticky, flour your work surface and roll it out with the help of a rolling pin, obtaining a thickness of about half a centimeter. Cut out the biscuits with the molds, kneading the scraps of dough again, until they run out. Arrange them on a baking sheet covered with parchment paper and cook a 180 ° C for 10 minutes.

When the cookies are taken out of the oven, they may still be slightly soft. They will dry out as they cool. Try to do not prolong cooking excessively, so that the cookies do not burn and do not harden too much, and wait for them to cool before tasting them. When they have cooled down, you might think about placing them on a wrapping tray or in a glass jar airtight rather large, so that you get a gift certainly appreciated.
