Turmeric-flavored bulgur stuffed tomatoes, the vegan recipe
Tomatoes stuffed with bulgur flavored with turmeric, prescription step by step and all vegetable to prepare a tasty and delicious first course alternative to the classic rice tomatoes. Excellent hot just out of the oven, they can also be served at room temperature and accompanied by well-browned baked potatoes.
Vegan recipe to be prepared with bulgur, local seasonal vegetables, and good extra virgin olive oil, it can be flavored with turmeric and personalized with other tasty ingredients such as olives from Gaeta or capers in salt.

- 1,2 kg of round tomatoes
- 200 gr of bulgur
- 1 sprig of basil
- 1 clove of garlic
- 1/2 teaspoon of turmeric
- 700 grams of potatoes
- Salt to taste

How to prepare bulgur stuffed tomatoes: procedure
- lavare the tomatoes, cut off the top cap and keep it aside, dig them internally,
- put the pulp in a colander and place the tomatoes upside down in order to let a little water of vegetation flow.
- To put then the pulp in a food processor together with the peeled garlic, the washed basil and the turmeric, and grind everything finely,
- put in a bowl with the bulgur, season with salt and oil, mix and let it rest for half an hour,
- meantime peel the potatoes, cut them into pieces and season with oil and salt, and put them in a pan,
- to fill the tomatoes with the previously seasoned bulgur, close them with the cap and add them to the pan,
- cook then in a hot oven at 180 ° for about an hour,
- cooking when finished, remove from the oven and
- let it rest for a few minutes before serving.
