A specificity concerning the Limone dell'Etna is the so-called "forcing" or "dry", a particular cultivation technique that is handed down from generation to generation and which gives rise to the summer production of verdelli lemons. The large-scale cultivation of Limone dell'Etna has very ancient origins, dating back to the end of the eighteenth century thanks to the expansion of maritime trade from the ports of Catania and Riposto.

There are two varieties of cultivars that grow on the slopes of Etna: Monachello e Feminello, whose peel, rich in essential oils, has a color that varies from light green to citrine or light yellow, according to the degree of ripeness. Limone dell'Etna is not only a precious and versatile ingredient in the kitchen, but it is a citrus fruit particularly appreciated by the cosmetic industry due to the superior characteristics of the essential oils obtained from the fruit and its unmistakable aroma.
