    From today, thanks to a new American technology, it is possible to package food without producing polluting waste, using a natural and edible coating.

    The spray coating controls the two main factors that cause the deterioration of fresh produce: the loss of water and the action of oxygen.
    By limiting dehydration and blocking reactions that require oxygen, fruits and vegetables can be kept for twice as long.

    The new edible packaging was designed in 2012 by startup Apeel Sciences thanks to a grant from the Bill & Melinda Gates Foundation.
    The goal was to create a material that would contribute to reduction of food waste in developing countries, which do not have refrigerators.

    The revolutionary product was then launched in the United States last year, where it has made it possible to reduce both waste and food waste.

    Made from vegetable raw materials and free from odor and taste, the packaging was initially experimented on avocados, which have a very short maturity window: thanks to this special coating, the avocados have maintained the right degree of ripeness for up to 6 days, rather than for two or three days.

    Edible packaging has also been successfully used on apples, lemons, limes, asparagus, cucumbers and other fresh products and from this week will arrive for the first time in Europe in some supermarket chains.



    The European Commission approved the use of the new coating in June of this year: the first countries where food packaged with the new edible coating will be introduced will be Germany, Denmark and the United Kingdom.

    Every year in Europe 88 million tons of food is wasted: supermarkets, shops, restaurants and families throw away a lot of fresh food that spoils quickly, at a cost of 143 billion euros a year.


    To cope with food waste, the use of plastic packaging has grown in recent years, but this has led to production of tons of waste, many of which end up polluting the seas, rivers and soil.
