The term tajine or tajin indicates a traditional dish of Moroccan and North African cuisine that takes its name from the pot with which it is prepared. The traditional pot is made up of an earthenware dish and a cone-shaped lid that is placed on top of the base during cooking. The base of the pot becomes the plate for serving the dish.

To make the best use of the tagine pot, consider that the ingredients with longer cooking times should be placed in the center of the plate while the others at the end. Inside the pot there must always be humidity then you will use watery vegetables or add a glass of water for cooking.

Always keep the low flame, to be safe, use a flame-spreading net to be placed on the gas stove that will help you distribute the heat better. Taste your preparation from time to time to check the doneness. Cooking times can vary a lot depending on the ingredients used. The cooking principles of the tagine cooker are somewhat reminiscent of those of the pressure cooker, but in this case you can lift the lid when you want.
