Only three ingredients are needed to prepare quince jam, one of the most popular autumn preserves 

The time of apples has begun… quinces! Sweet and nutritious, this autumn fruit with a thousand properties and a slightly acidic flavor lends itself very well to the preparation of a delicious jam. The quince-based preserve is one of those “grandmother's recipes”, whose scent can bring us back to our childhood. The classic recipe includes sugar, but the one we propose is a less caloric version (where the sugar is replaced by the natural sweetener stevia), but equally delicious.

Making it is child's play and we are sure you will love it on rusks for breakfast. You can also use it to fill homemade tarts and biscuits.

Ingredients

  • 1 kg of quince
  • 60 grams of stevia
  • 1 lemon bio

Preparation 

First, wash the quinces thoroughly. Cut them into small pieces without removing the peel and put them in a saucepan. Add a little water to cover the pieces of fruit and squeeze the juice of one lemon. Now boil over medium heat for about 20 minutes, stirring constantly with a wooden ladle, until the quinces have softened. Once cooked, drain them and mix them with an immersion blender. Add the stevia and mix. Cook again on low heat for another half hour, stirring occasionally until the jam has reached a thicker consistency. When it is ready, transfer the still warm jam to the previously sterilized glass jars. Close the jars hermetically and arrange them on a table upside down, so that the vacuum is formed.



You can keep your homemade jam for about three months. But once the jars are opened, keep it in the fridge and consume it within four days.
