What's more rejuvenating than a fruit popsicle on a hot summer day? Among the most thirst-quenching ones we find lemon and mint popsicles, a winning combination and much loved by those who suffer from the heat. There is no need to buy them at the supermarket, since most of those on the market contain too many sugars, dyes and preservatives. After all, preparing them at home is very simple. Lemon and mint popsicles turn out to be a light and genuine snack that will please both adults and children. They are also excellent as a dessert, instead of the classic sorbet. 

Let's see how to make them using a few ingredients and avoiding sugar in order to make them even healthier.

Ingredients (for 4 popsicles)

  • 100 ml of lemon juice (preferably organic)
  • 200 ml of water 
  • 40 grams of agave syrup (alternatively 80 grams of fructose)
  • a few mint leaves 

Preparation

Heat the water in a saucepan over low heat, add the agave syrup or fructose, stirring well until it melts. Squeeze the lemons and strain the juice through a sieve and then transfer it to the saucepan. Wash the mint leaves thoroughly and chop them with your hands. Transfer the lemon juice and mint to the saucepan and bring to a boil, stirring occasionally.



Let it cool and decide whether to leave the mint leaves or filter the mixture to remove them. Transfer the liquid obtained into the molds and store in the freezer for at least 5 hours before serving. Instead of the classic wooden sticks, you can also use licorice sticks to make them even tastier. 

Before enjoying your homemade popsicles, we advise you to pass the molds for a few seconds under tap water to extract them more easily.
