    New research has discovered the importance of growing sprouts at home as an incredible nutritional resource worldwide, in view of the climate challenges that lie ahead. They are a bomb of antioxidants and nutrients





    Born decades ago as verdure gourmet and trendy, today i shoots they have gained popularity among consumers for their nutritional profile and high content of antioxidant compounds.

    A new study suggests these tiny plants have the potential to help provide nutritional security globally. As part of a project titled Food resilience in the face of global catastrophic events, an international team of researchers has found that these vegetables can be grown in a variety of production systems, in small indoor spaces and with or without artificial lighting.

    With sprouts, therefore, people can produce fresh, nutritious vegetables even in areas considered food deserts. The nutritional profile of these foods is associated with the rich variety of colors, shapes, structural properties and flavors obtained from the germination of a multitude of edible plant species, including herbs, herbaceous crops and wild edible species.

    With a short growing cycle, requiring only minimal fertilizer inputs, these herbs have great potential to provide nutrients and essential antioxidants. Consumers could easily produce these sprouts at home, using simple tools available in the kitchen, such as a simple glass jar to grow them. 

    Given all the characteristics of the shoots, the scientists from NASA and the European Space Agency they also proposed them as a source of fresh food and essential nutrients for astronauts on long-term space missions. In fact, under such circumstances it is possible to grow a variety of small fresh, nutrient-rich vegetables that can provide minerals, vitamins and antioxidants in a relatively short time. 

    This new study was presented virtually during the International Symposium on Soilless Culture and Hydroponics sponsored by the International Society for Horticultural Science last spring and the research paper was recently published in Acta Horticulturae.
