recommended doses for two people
- 650 gr of Coop organic green vivi yellow flesh potatoes (raw weight)
- 100 gr of Coop green vivi organic salad
- 1 red onion
- 150 gr mix for green live salads Coop
- vivi verde organic balsamic vinegar Coop qb
- extra virgin olive oil to taste green live Coop
- Salt to taste

Procedure for the spring potato salad:
Wash the potatoes and put them in a pot full of cold water, put them on the fire and cook them until they are easily skewered with a fork.
When cooked, remove them from the water e let them cool.
Peel the potatoes previously cooked, cut them into small pieces and put them in a very large salad bowl.
Now clean the spring onion, sever the ends and remove the first outer layer, then slice it thinly.
Add the freshly prepared spring onion to the salad bowl, the insalatina organic vivi verde Coop and green salad mix Coop.
Now season with extra virgin olive oil, Coop green vivi balsamic vinegar and a pinch of salt.
Mix the spring potato salad carefully so as to mix all the ingredients and serve.
You can prepare the spring potato salad even in advance and store it in the refrigerator until ready to serve.
The spring potato salad can be stored in the refrigerator for about a couple of days.
