The spelled pasta keeps cooking perfectly and remains firm, and therefore lends itself well to being used also for apasta salad; it is also cooked in a few minutes and therefore allows us to shorten the preparation time for our meals. The Tropea red onions and tomato pulp, cooked in equal measure, blend perfectly, becoming an almost creamy condiment with sweet and delicious flavor.
Ingredients for four people
350 gr of live green spelled pasta
400 gr of Tropea red onions
400 gr of live green tomato pulp
280 grams of water
extra virgin olive oil to taste
Salt to taste
Time: About 7,5 hrs in total, 4,5 hrs to go up and 3 to come down preparation 5 '- cooking 1 h

Procedure for the spelled pasta with red onions:
To peel the onions, divide them in half and slice them thinly.
Leek the freshly sliced onions in a large pan with a drizzle of oil and brown them over medium heat.
Add water and cook over low heat until softened,
to merge now the tomato pulp and an additional glass of water,
regular salt and cook over a very low heat, stirring occasionally until the cooking water has completely dried.
Cook then the spelled pasta in boiling salted water for eight minutes,
cooking when finished, drain and mix with the sauce.
Spelled pasta with red onion can be served immediately or, after draining it, it can be cooled under running water and served cold.
