This is the recipe that I will show you today, that of bread all olives, a typical preparation of Apulian cuisine and particularly tasty, which I made with sourdough and XNUMX/XNUMX cup rice flour. Excellent to make also for Christmas lunch, bread with olives is a soft bread, enriched with pitted green olives, whether whole or cut into small pieces.

In fact, it is they who make it so appetizing even if eaten alone. Ready, then, to do a step back into our past, in search of the fundamental principles of healthy eating? It is in these moments that I am very happy to have the sourdough and to be able to enjoy the satisfaction of making bread with my hands. It's really priceless.



Ingredients

  • 150 gr of refreshed mother yeast
  • 250 0 grams of flour
  • 250 gr of rice flour
  • 1 teaspoon salt
  • 350 grams of water at room temperature
  • pitted green olives
  • Preparation Time: 20 minutes
  • Cooking time: 50 minutes
  • Rest time: 10 hours of leavening
  • Dose: 4 people to

Green olive bread: preparation

Dissolve the sourdough in the water and add the flours, a little at a time. Knead and add the salt. Keep working up to obtain a soft, smooth and homogeneous mixture. Then let it rise, depending on the temperature you have at home, from 6 to 8 hours in a bowl, however, until the dough doubles. Only then can you rework it, adding the olives and continuing to knead forming a loaf, which you will rest in a pan lined with parchment paper for another 2 hours at room temperature.

Turn on the oven at 220 ° C, placing a saucepan with hot water on the bottom, and bake the loaf, on which you will have engraved two or three cuts crosswise with a sharp knife. Leave this temperature for 10 minutes, after which you will lower it to 200°C, continuing to cook for others 30 40-minute approximately. Remove from the oven, enjoy the smell and wait for it to cool down to bite into it with taste.
