What exactly happens? A pastry shop in Stockholm has decided to offer its customers a space with experts who take care of the jars of mother yeast left in custody by those who have to leave the city for work or holidays.
So on returning from the trip there is no risk of finding the sourdough in poor condition. Obviously, those who do not have a baby sitter available for sourdough, as happens in Stockholm, can leave it for a few days with a friend or relative to whom they can explain well what to do to freshen it up.
Some people prefer to put the sourdough in the freezer while they are away so that it does not deteriorate in their absence. Sure, have an expert on mother pasta cuddling it while we travel may seem like a rather unusual solution, but perhaps it solves the problems of those who prefer that their beloved mother yeast is always refreshed regularly and treated with the utmost care.

The creators of the initiative know that for many keeping the mother yeast alive is very important, given that in some cases the origins of the sourdough we take care of can go back a long time, even 100 years.
