ingredients:

  • 500ml of rice milk (here the recipe to make it at home)
  • 30g of raw cane sugar
  • the zest of a lemon bio
  • 2 nice spoons filled with XNUMX/XNUMX cup rice flour
  • 2 level teaspoons of agar
  • for flavoring: optional (and depending on the season: spring locust, summer elderberry, alternatively vanilla)
  • a bunch of black locust flowers (50g + someone to decorate) (infusion of black locust flowers: antacid).
  • a di rametto elderberry flowers (50g + someone to decorate) (Elderflower infusion: anti-inflammatory for the respiratory tract).
  • un vanilla bean (dig the pod and then put both the chiccolini and the pod) (vanilla has stimulating and antiseptic properties).

Method

Bring the milk to the boil, add the flowers (only the corollas with the pistil) or the vanilla, turn off the heat, cover and let it rest and cool. Strain the milk with a sieve, put it back in a pan, pour in the rice flour, mix well with a whisk to avoid lumps, add the sugar and lemon zest, put on the stove until it starts to boil, add the agar agar and mix well, leaving the heat on for another 30 seconds, then turn off. Pour the mixture into a pudding mold or 4 molds and refrigerate for a few hours until solidified.

In my variant I have arranged gods ladyfingers on the bottom of the mold before pouring the mixture, wet with lemon syrup or, for the vanilla variant, we exaggerate: a few drops of bourbon rum (obtained from vanilla bean).



When ready to serve, immerse the bottom of the container in hot water and then turn it upside down on a saucer and possibly decorate with the flowers set aside.
