    It is called a recycled pie, because it is based on fish left over from the day before. Do you know those situations in which the fish that you baked or boiled the night before looks at you, begging you not to throw it away? The pie that we propose this time is the solution to recycle all the leftovers (even those that just do not go down there): you will recover any type of cooked fish to make a nice and tasty flan on the palate!

    Is called recycled cake, because it is the basis of leftover fish from the day before. Do you know those situations in which the fish that you baked or boiled the night before looks at you, begging you not to throw it away? The pie that we propose this time is the solution to recycle all the leftovers (even those that just do not go down there): you will recover any type of cooked fish to make a nice and tasty flan on the palate!



    To make it even tastier, I recommend accompanying it with some boiled cartote and basmati rice seasoned with soy sauce.

    Ingredients for 2 single-portion cakes:

     

    • 300 g of boiled fish (but also grilled or baked)
    • 3 large potatoes
    • 1 teaspoon of chives
    • 2 spoons of bread crumbs
    • 2 teaspoons of mayonnaise
    • 3 pinches of salt

    For the side dish:

    • 150 g of mini baby carrots
    • 100 g of basmati rice
    • 2 tablespoons soy sauce

    Clean the potatoes with a damp cloth and put them in the pressure cooker, add 2 cups of water and close with the lid. Cook for about 30 minutes from the start of the valve hiss.

    Take all of the leftover fish and chop it up with a fork, add thechive, bread crumbs and mix.

    When the potatoes are pretty soft, drain them, cool them under water and peel them; then mash them until you get a homogeneous mush, add it to the fish mixture, put 3 pinches of salt and mix.

    Once this is done, let the dough rest in the fridge for about 30 minutes, then take it back and transfer the mixture into two square and well oiled pastry rings at least 6-7 cm wide and about 4 cm high, press with the back of a spoon to level it well, then gently remove the pastry rings and put a teaspoon of mayonnaise on the surface. Your potato and fish pie is ready!



    If you want a delicious side dish but without great pretensions, boil the baby carrots for about ten minutes, then drain and let them cool; aside, boil the basmati rice for about 13 minutes, then drain and serve with the soy sauce.
