    The easiest way to do this is to remove the leaves from the stem, rinse and dry them. At this point, just place them on a tray in the freezer and, once frozen, gently collect them in a freezer container on which it is also useful to affix the packaging date. We suggest using a container for two reasons: the first is that we would avoid using disposable plastic bags, the second is that the leaves are less damaged.

    Another alternative is to put the herbs, from basil to rosemary, in ice containers together with extra virgin olive oil to have tasty cubes available to use when needed.

    Finally, once frozen, the cubes can be placed in a space-saving container. Finally, we can take advantage of an additional system that uses a great international chef, Jacques Pepin who prefers not to freeze the finished pesto but to opt for the freezing of a basil puree to be transformed into pesto after defrosting.

    Here is the procedure:

    • Immerse in boiling water and cook the basil leaves until soft (about a minute)
    • Drain in a colander and cool in water and ice
    • Drain again and press gently to remove excess water
    • Put in a blender with a pinch of salt and olive oil
    • Blend until creamy and freeze in small portions
