Pasta and artichokes, the perfect recipe to prepare it with a touch of the chef

Pasta with artichokes, prescription perfect for preparing it in a short time. This first course vegan with a delicate flavor typical of our cuisine, it is quick and easy to make.

A simple recipe for artichoke lovers, to which we have added a "touch" of ginger to enhance the flavor of the sauce.


  • 4 artichokes
  • 1 clove of garlic
  • 15 gr of fresh ginger
  • 30 ml of white wine
  • 320 gr of pasta
  • extra virgin olive oil qv
  • Salt to taste

How to prepare pasta with artichokes: procedure


  • To clean the artichokes and slice them thinly,
    peel the garlic and finely chop it with a knife, put it in a pan with plenty of oil and add the grated ginger,
  • add now the artichokes, lightly brown them and deglaze with the wine, let it evaporate then cover with water, season with salt and cook over high heat, stirring often until the cooking water is almost completely consumed.
  • Meantime cook the pasta in abundant boiling salted water and drain it almost al dente,
    add it to the artichokes and whisk it, adding a drizzle of oil if necessary.
  • Cooking when finished, serve the pasta and artichokes immediately and serve.
