Paradise cake, the recipe to prepare it very soft and tasty even without butter
Cake heaven, prescription to prepare it without butter. Very soft and with a delicate taste, it is a very simple dessert created to be served at the end of a meal but also suitable for breakfast or for a mid-day snack.
Conceived in Pavia by the pastry chef Enrico Vigone commissioned by the Marquis Cusani Visconti, the Paradiso cake was created with the intention of preparing a dessert that would remain soft and tasty for several days; it was the noblewoman who tasted it first that she called it "the Paradise Cake".
Loved by young and old alike, the paradise cake is a very soft sweet sprinkled with abundant powdered sugar; the original recipe is based on 00 flour, potato starch and butter, while our version is with Kamut® oil, water and 1 flour. If you still want to prepare it with butter, all you have to do is replace the water and oil with one hundred and twenty grams of butter melted in a bain-marie.

Ingredients for a mold with a diameter of 22 cm
- 50 grams of sunflower oil
- 70 grams of water
- 3 medium eggs
- 150 gr of brown sugar
- 1 sachet of baking powder
- 100 gr of potato starch
- 130 gr of farina di camut®
- organic lemon zest to taste
- powdered brown sugar to taste
- oil and flour to taste for the mold

How to prepare the paradise cake: procedure
- Grease and flour the mold and sift together the flour, starch and yeast.
- Install the eggs until frothy, then incorporate the oil and water,
- add also the sugar and continue whipping,
- to merge now the sifted flour and yeast and finally add the grated lemon peel,
- mount for a few minutes, then pour the mixture into the previously prepared mold.
- Bake in the hot oven and cook for about forty minutes in static mode at 170 ° (after the first half hour of cooking it will be possible to carry out the toothpick test to verify cooking)
- cooking when finished, remove from the oven, gently unmold and let the cake cool on a wire rack.
- When the cake will be cold sprinkle it on the surface with the icing brown sugar and serve it.
How to preserve the paradise cake:
The heaven cake if placed in special airtight containers will remain fragrant for a few days.
