The food biological è richer than antioxidants. Contains fewer toxic metals and fewer pesticides. The levels of antioxidants present in organic foods are higher than in food from conventional agriculture for a percentage ranging from 19% to 69%.

This is demonstrated by a new study conducted in the United Kingdom, which bears the title of "Higher antioxidant and lower cadmium concentrations and lower incidence of pesticide residues in organically grown crops". In foods grown according toorganic farming there are fewer pesticide residues, lower cadmium concentrations and a greater amount of antioxidants.

A group of researchers from Newcaslte University analyzed 343 studies on the subject and concluded that choosing organic food for your diet enriches the diet with antioxidants as if we ate 1 or 2 extra servings of conventional fruit and vegetables a day. The study also found that the levels of cadmium and mercury, both toxic, in organic products are at least 50% lower.

According to what was declared by Professor Carlo Leifert, who led the team of researchers: "This study shows that choosing food produced according to organic standards can lead to an increase in the intake of antioxidants through the diet and reduce exposure to toxic heavy metals."

In Leifert's opinion, this study must represent a starting point for deepen the nutritional superiority of organic foods. The researchers proved beyond doubt that there are differences among the substances present in organic and traditional foods. So now there is an urgent need to conduct specific studies that identify the impacts on human health of the transition to an organic diet.

A previous study had shown that eating organic for a week reduces pesticide levels in the body by 90%. The hope is that the new results obtained by science can spread a greater awareness of the importance of choosing organic and supporting organic agriculture. According to Soil Association, among the reasons that push citizens to choose organic, we find health, the desire to avoid the residues of unwanted substances, better taste and greater respect for the environment.
