How to prepare Russian pancakes based on Kefir: discover the Oladyi (or Oladi) recipe

Have you ever tasted the Oladi (or Oladythe)? It is a sweet specialty, typical of the Russian culinary tradition, very reminiscent of American pancakes. But, compared to the latter, the Oladyi are thicker and have a soft and irresistible texture.Their secret ingredient is Kefir, the drink rich in lactic ferments obtained from the fermentation of milk.

It is no coincidence that Kefir is very popular in Eastern European countries, where it is considered a precious ally to heal the intestine and promote good digestion. In recent years, Kefir has become one of the most consumed fermented foods in our country as well.

The Oladyi are, therefore, perfect to start the day with one tasty, healthy and nutritious breakfast or for a protein snack. Preparing them is really simple and they can be stuffed in various ways: with fresh fruit, jam, hazelnut cream, honey or maple syrup.

Ingredients for the Oladyi (12 pancakes)

  • -500 ml of Kefir
  • 1 egg
  • 2 tablespoons sugar
  • ½ teaspoon salt
  • 350 grams of flour (of your choice)
  • ½ teaspoon of baking soda
  • icing sugar


In a large bowl, mix the kefir, one egg, sugar and salt with the help of a whisk. In another bowl, instead, combine the flour and baking soda and then add the previously prepared mixture. Mix with a spoon until the batter is thick and free of lumps. Let the mixture rest for about a quarter of an hour.

To cook the Oladyi, use a non-stick pan, filling it with a drizzle of sunflower oil. When the oil is hot enough, pour a heaping spoonful of batter into the pan and wait a couple of minutes before turning the pancake to cook the other side as well.

To understand when the time has come to turn the pancake, we advise you to pay attention to the formation of small on the surface of the batter. Repeat this operation until the dough is finished, adding a drizzle of oil for each pancake.

When cooked, place the pancakes on a plate with some absorbent paper to absorb the excess oil. As you will see, the Oladyi will have a soft texture and a golden color, very similar to that of classic American pancakes.

You can also serve them hot with a sprinkling of icing sugar and a little jam, honey or fresh fruit, according to your tastes. Enjoy your meal!
