Eat the lentils a New Year - according to a famous saying - door money and luck. Will there be any truth in this ancient popular belief? Maybe not, but given the beneficial and healthy properties of this precious vegetable, it is worth eating often. Because if they don't bring money, lentils still provide a great deal supply of vitamins, fibers, mineral salts and proteins useful for our body!

Here is a quick and easy recipe to be able to enjoy them on New Year's Eve, without sautéing for too long in front of the stove: paprika lentil soup. Obviously also suitable for vegetarians and vegans as it does not contain any ingredients of animal origin.



Ingredients

  • 2 kg of lentils
  • 2 cloves of garlic
  • 3 carrots cut vertically, to cigarettes
  • 2 stalks of celery cut vertically, to cigarettes
  • 250 g of tomato pulp
  • 2-3 pinches of salt
  • 3 tablespoons of extra virgin olive oil
  • 1 liter of vegetable stock
  • 1 glass of red wine
  • 2 teaspoons of paprika
  • 1 pinch of red pepper
  • Preparation Time:
    15 minutes

    6-8 hours to soak

Procedure:
The day before making the soup, put the lentils in a glass bowl, completely covered with cold water, and let them soak for about 6-8 hours.

Once found, drain and set aside.

At this point, heat the oil in a large saucepan, add the peeled cloves of garlic and sauté for a few minutes, then add the carrot and celery pieces, then pour the lentils, add a glass of red wine and let it cook on the fire. high for about 10 minutes (making sure that in this time the alcohol in the wine has completely evaporated. If not, let it cook for a few more minutes), add the tomato and stir, then pour the vegetable broth, add the salt and leave cook for about an hour.
Once well cooked, add the p and the chilli and serve!



If instead of soup, you prefer to taste the dry lentils, put 600-700 ml of broth (instead of a liter) and evaporate any residual water, prolonging the cooking for a few minutes.
