Mimosa cake, the perfect recipe to prepare it at home. Sweet symbol of women's day due to its particular appearance reminiscent of mimosa flowers, this cake made with sponge cake and diplomatic cream is soft and delicate and appreciated beyond 8 March.

Its preparation is very simple, and for a better yield, it is advisable to prepare the sponge cake at least a day before in order to let it rest long enough to make it softer and more spongy. The filling is usually based on diplomatic cream but it is also possible to combine it with fruit in syrup; our version, on the other hand, includes a filling based on Custard Lemon which gives the mimosa cake a note of freshness.



  • 1 sponge cake (20 cm diameter)
  • 500 ml of milk
  • 50 grams of corn starch
  • 150 gr of brown sugar
  • 60 grams of egg yolks
  • 2 organic lemons

How to prepare the mimosa cake: procedure

  • Prepare the cream by putting the egg yolks and sugar in a large pot with a thick bottom, work them together with a whisk and add the flour and the grated rind of the lemons,
  • deposit the milk slowly, stirring constantly to avoid lumps and cook over moderate heat, always stirring until the cream thickens,
  • remove it then from the heat, put it in a baking dish and cover it with food film in contact to prevent it from drying out on the surface and allow it to cool completely.
  • When the cream will be cold cut the sponge cake to a centimeter from the edge, set the upper cap aside and
  • with spoon dig it internally,
  • one time when completely emptied, fill the sponge cake with the cream, taking care to leave a little aside and then close it with the previously cut cap,
  • and sprinkle its surface with the leftover cream,
  • crumble now the sponge cake removed from the cake and with this cover it.
  • The mimosa cake it can also be served immediately or it must be placed in the refrigerator until ready to serve.

How to store the mimosa cake:

If the mimosa cake is left over, it can be kept in the refrigerator and must be consumed within a couple of days.
