    To put pen to paper what has been intuited for some time is a new study conducted by researchers fromUniversity of Montreal, in collaboration with the ÉPIC (Center for the Rehabilitation and Prevention of Cardiovascular Diseases) and the Montreal Institute specializing in heart health. The research was presented at the latest Canadian congress on cardiovascular diseases by the study coordinator, Dr. Anil Nigam, Research director at the ÉPIC Center and associate professor at the local university's medical faculty.

    Nigam discovered the harmful effects of junk foods and those benefits of the Mediterranean diet after comparing the direct and immediate consequences of individual foods on vascular tissues, in particular on the inner lining of blood vessels. In short, junk food clogs arteries more quickly and thus makes them less efficient; in this way the risk of cardiovascular disease increases both in the short and in the long term.

    "We believe a Mediterranean diet can also benefit those with high triglyceride levels," he said Nigam - because it helps keep arteries clean and functioning ". The results reported and disseminated by Dr. Nigam came from a simple experiment on 28 non-smoking men, who ate only Mediterranean foods for a week and only junk foods for the following seven days.

    The Mediterranean meal was based on salmon, almonds and vegetables cooked with olive oil (51% of the total calories was represented by monounsaturated fatty acids and polyunsaturated fats). The junk meal, on the other hand, consisted of a sandwich made with sausage, egg, a slice of cheese and three potato pancakes (in this case, 58% of the total calories was represented by saturated fats without omega 3. Moral? After consuming the junk food meal, the participants' arteries were much less dilated than normal (24% less than when fasting), while after eating Mediterranean foods they had regular dilation and optimal blood flow!



    “These results show the effects of what we eat daily. The malfunctioning of the vascular tissues is the antechamber of arteriosclerosis and now it is time to keep this in mind before going to the table ”, the experts conclude.
