Low-fat chocolate thanks to agar agar

    Some time ago we gave you news of the Spanish firm that had loudly stated and to the delight of all: chocolate makes you lose weight! not everyone, however, allowed themselves to be convinced by the scientific evidence brought by the researchers of Granada and several people continue to limit a lot or completely eliminate this food for fear of gaining weight. However, there are those who have thought about creating a low fat chocolate. Like? adding algae!

    In a laboratory ofWarmick University some scientists have developed a leaner alternative to traditional chocolate using a key ingredient, algae. It was born like this “choco-lite” which replaces the fat present in the chocolate of microscopic bubbles of gelatin based on agar agar, a tasteless alga widely used in food preparations for its gelatifying power.

    Researchers have noticed that this alga, heated in the right way, solidifies at the same temperature as chocolate and together makes the whole less fat but also richer in fiber. Thanks to these substances, among other things, it could also be possible to keep appetite at bay.

    A good result according to the scientists, especially considering that previous attempts at reduce the fat content of chocolate - usually approximately 30% - managing to maintain taste and consistency they had failed. For example, he tried to insert small air bubbles which however left the sensation of a chocolate that was too light, then he tried it with water but the latter removed the crunchiness of the tablet and risked forming a white patina.

    Now it is the turn instead of the seaweed chocolate which, according to the researchers, seems to be perfect and "damn good". Industry experts have welcomed the anticipation of the choco-lite, but the question remains whether regular chocolate consumers will appreciate this new lab creation too!
